What makes this different from supermarket ghee?
Two things. It is churned from cultured curd by hand rather than spun out of cream by a centrifuge — that is where the grain and the aroma come from. And every batch is independently lab tested (Butyro Refractometer, Reichert-Meissl, Polenske, Baudouin), which is what catches vanaspati, palm oil and sesame adulteration.
Which size should I order?
A family of four typically gets through about a litre a month with daily cooking. The 1 litre is what most households reorder. If you cook sweets in volume or want the best price per litre, the 2 and 3 litre work out ₹49 and ₹66 cheaper per litre.
Why does bilona ghee cost more?
Hand-churning cultured curd leaves fat behind in the buttermilk, where a centrifuge would not. We need substantially more milk per litre than a creamery does, and roughly a day longer. That is the whole of the price difference.
My jar has turned hard and grainy
That is the sign you want. Real bilona ghee sets danedar — visibly granular — firms in cool weather and runs clear again as it warms. Ghee that stays perfectly smooth all year is usually the more processed one.
